Diners quietly trade notes on the $70 four-course menu: chirashi layered with sweet Hokkaido scallops and crab, fresh-grated wasabi, and handmade seafood pasta. The room holds only a handful of tables, tended start-to-finish by a solo chef and his wife. Dishes take time to leave the pass, but the kitchen rewards every minute of patience, finishing on rich bowls of miso ramen and Belgian chocolate mousse.
